The pizza
Dough made with extra virgin olive oil and left to rise naturally for 72 hours: a light, easy-to-digest pizza, baked in the wood-fired oven.
In Vico Caetani since 1989, a few steps from the little harbour. Homemade egg pasta, fish from the gulf cooked the Gaeta way and a pizza that rises for 72 hours before going into the wood-fired oven.

From little clouds of pizza dough to supplì, all the way to fried squid and anchovies: golden, crisp and made to order.
A small square in the old town looking onto the boats of the harbour, where in the evening you dine outdoors.
We are in Sant'Erasmo, the quarter of the Dukes of Gaeta: lanes, arches and stairways that have been running down to the harbour since the 12th century. It is here, in Vico Caetani, that the Calpurnio oven has been lit since 1989.
It opens in Vico Caetani, a stone's throw from Piazza del Pesce and the fishermen's boats.
We have been running it ever since: the same vaulted dining room, the same oven, the same seafood cooking as always.
At the contest held to commemorate Pope Gelasius II, Paride Bruschi, pizza maker and owner, bakes a pizza shaped like the coat of arms of Gaeta, with bands of red salami and a white side of onion and ricotta: first prize.
Beppe Convertini and Ingrid Muccitelli, the faces of Linea Verde on Rai 1, stop by for dinner.
Fresh egg pasta, fish from the gulf cooked the Gaeta way, long-rising pizza.

In our dining room, among the stones of the old quarter, we keep a Roman tombstone almost two thousand years old. It is dedicated to Quintus Calpurnius Genialis, a magistrate of the colony of Formia: our name comes from him.
The Calpurnii were one of the great senatorial families of Rome. Calpurnia, the wife of Julius Caesar, came from them, and so did the Pisones, leading figures in the conspiracies of the early Empire. Ask us to see it: we will tell you the story at your table.
A cosy room with a barrel vault and the exposed stone of the old quarter. The atmosphere of medieval Gaeta, in every season.
The covered veranda in Piazza del Pesce, a few steps from the sea: you dine facing the boats of the harbour, sheltered from the sun and the evening breeze.
Four recipes of our own, each with its own name: from Il Borgo, with anchovies and Gaeta olives, to Aietés, with pistachio and king prawns.
Anchovies, cherry tomatoes, Gaeta olives, garlic, extra virgin olive oil and sunflower oil, parsley.
